Winemaking
- Pressing: whole-bunch gentle pneumatic pressing
- Cold settling: 48 hours at 6 °C before fermentation
- Fermentation: 22 days at 12–14 °C in stainless steel (slow, cool fermentation preserves aromatics)
- Malolactic fermentation: blocked
- Sur lie ageing: 4 months, no bâtonnage (to retain delicate aromas)
- Fining: bentonite
- Filtration: sterile membrane filtration
Tasting Notes
Appearance: Pale straw with silvery glints, crystal clear.
Nose: Intensely aromatic — white peach, apricot, jasmine, and lime blossom with a characteristic petrol-mineral note typical of Riesling. Fresh and inviting.
Palate: Off-dry, with a beautifully balanced tension between high acidity and delicate residual sweetness. Flavours of citrus, stone fruit, and a slate-like minerality. The palate is precise and elegant.
Finish: Long and refreshing — 45–55 seconds.
